Yuca con Mojo
Yuca con Mojo is a traditional Cuban side dish made with tender cassava root (yuca) drizzled in a flavorful garlic-citrus sauce. The yuca is first peeled, cut into chunks, and boiled until fork-tender. Once cooked, it is topped with mojo — a warm sauce prepared by gently sautéing sliced garlic in olive oil and combining it with fresh sour orange juice (or a mix of orange and lime juice), a pinch of salt, and sometimes a dash of cumin.
The resulting dish is rich in texture and vibrant in flavor — the starchy yuca absorbing the aromatic garlic and tangy citrus, while the olive oil adds a silky finish. It is typically served warm, often as a complement to grilled meats or roasted pork, and garnished with thinly sliced onions cooked briefly in the mojo itself.
