Description:
Tender, slow-cooked shredded beef simmered in a rich tomato-based sauce with bell peppers, onions, garlic, and a blend of traditional Cuban spices. This iconic dish gets its name—“Ropa Vieja,” meaning “old clothes”—from its signature stringy, shredded texture.

Cooking Process:
The beef is first simmered slowly in a seasoned broth until it’s soft enough to be easily shredded by hand. Separately, a sofrito of onions, peppers, and garlic is sautéed in olive oil. The shredded beef is then returned to the pan and combined with crushed tomatoes, white wine, and spices. Everything simmers together until flavors are deeply blended and the sauce is thick and savory.
