Ingredients:

For the plantain cups:

  • 3 large green plantains

  • Vegetable oil (for frying)

  • Salt to taste

For the filling (ground beef option):

  • 1/2 lb ground beef

  • 1/4 cup finely chopped onion

  • 1/4 cup finely chopped red bell pepper

  • 1 clove garlic, minced

  • 1 tbsp tomato paste

  • 1 tsp ground cumin

  • Salt and black pepper to taste

  • Optional: chopped cilantro for garnish


Preparation:

  1. Prepare the Plantains:

    • Peel the green plantains and cut them into 2-inch chunks.

    • Heat vegetable oil in a deep pan to 350°F (175°C).

    • Fry the plantain pieces for 3–4 minutes until slightly golden and softened.

    • Remove and drain on paper towels.

  2. Form the Cups:

    • Using a small cup or a tostonera with a cup-shape insert, press each fried plantain piece to form a small cup.

    • Return the cups to the hot oil and fry again until crispy and golden brown (about 3 more minutes).

    • Drain and sprinkle with salt.

  3. Make the Filling:

    • In a skillet, heat a small amount of oil and sauté the onions, peppers, and garlic until soft.

    • Add the ground beef, breaking it up as it cooks.

    • Stir in tomato paste, cumin, salt, and pepper. Cook until the beef is fully browned and well seasoned (about 8–10 minutes).

  4. Assemble the Cups:

    • Spoon the hot filling into the crispy plantain cups.

    • Garnish with chopped cilantro or a light drizzle of garlic sauce if desired.
