
Tostones Rellenos (Stuffed Plantain Cups)
Ingredients:
For the plantain cups:

3 large green plantains

Vegetable oil (for frying)

Salt to taste
For the filling (ground beef option):

1/2 lb ground beef

1/4 cup finely chopped onion

1/4 cup finely chopped red bell pepper

1 clove garlic, minced

1 tbsp tomato paste
-
1 tsp ground cumin
-
Salt and black pepper to taste

Optional: chopped cilantro for garnish
Preparation:

Prepare the Plantains:

Peel the green plantains and cut them into 2-inch chunks.

Heat vegetable oil in a deep pan to 350°F (175°C).

Fry the plantain pieces for 3–4 minutes until slightly golden and softened.

Remove and drain on paper towels.

Form the Cups:

Using a small cup or a tostonera with a cup-shape insert, press each fried plantain piece to form a small cup.

Return the cups to the hot oil and fry again until crispy and golden brown (about 3 more minutes).

Drain and sprinkle with salt.

Make the Filling:

In a skillet, heat a small amount of oil and sauté the onions, peppers, and garlic until soft.

Add the ground beef, breaking it up as it cooks.

Stir in tomato paste, cumin, salt, and pepper. Cook until the beef is fully browned and well seasoned (about 8–10 minutes).

Assemble the Cups:

Spoon the hot filling into the crispy plantain cups.

Garnish with chopped cilantro or a light drizzle of garlic sauce if desired.
